It is approved according to current legislation and regulations for purity and quality
tested in a specialised laboratory.
Purpose of treatment

- to facilitate the pumping of the mash
- easier fermentation and better fermentation for optimum alcohol extraction
- more intensive opening of the fruit tissues, thus releasing valuable constituents and increasing fruitiness

The product and its effects
Distizym® FM is a highly effective and effective treatment for berries and stone fruits with acidic pH.

Distizym® FM is able to rapidly break down all pectin substances, resulting in a drastic reduction in viscosity and
rapid mash solubilisation. The mash becomes easier to mix and pump. The intensive
mashing process releases valuable flavour compounds which increase the aroma and flavour content.
Mash liquefaction and mash maceration facilitate the fermentation process, allowing for a more complete fermentation, which
more optimal alcohol extraction. It also reduces the risk of burning during distillation.
Dosage and application
The dosage of the enzyme depends on the raw material, maturity, temperature and duration of action.
The dosage indicated below refers to a treatment temperature of 15 °C.

Distizym® FM is diluted to a 5-10% solution in cold tap water, preferably immediately at the time of grinding. If the
