Its ownership, its operational structure, its market relations and even its production structure have been transformed, not to mention the large-scale reduction in the number of people employed. According to 2007 data, agricultural production is produced by 619 000 individual farms and 7 400 economic organisations. Farms are therefore highly differentiated in terms of size, capacity, profitability and prospects. In order to develop any strategic plan, it is essential to understand the main characteristics of domestic farms, their state of strength, their workload and their future prospects. The Hungarian food industry is going through a period of crisis. Yet the sector, which has earned an international reputation and market for Hungarian foodstuffs, deserves a great deal of attention, as its decline and fall could also take agriculture down with it. And this failure to act would be highly irresponsible. Reversing the process cannot be delayed and action must be taken at all levels. However, this requires a better understanding of the environment in which food processing organisations operate, the companies themselves, their structures and their main characteristics.
