Use: In the food industry as a solidifying agent. Food additives. /Prevents mould./
Application. In addition, calcium chloride is used as a firming agent in fruit and vegetable processing. When fruit juices or salads are washed with a calcium chloride solution after slicing, the cells are sealed at the cutting point, preserving their colour and freshness and keeping the pieces more stable.
Dosage: usually 2,5-3 g per 1 litre of stock, or according to the Hungarian Food Guide.
